Meximodo Cocina Mexicana & Tequila Bar, a new restaurant rooted in classic techniques with unique twists on bold flavors, is set to open in downtown Metuchen, NJ this week November 9, 2023 and downtown Jersey City in 2024. The restaurant is part of Le Malt Hospitality Group and will be housed in Haus25, a 56-story tower along Columbus Drive. The 8,000-square-foot space will feature outdoor seating and 21-foot ceilings, as well as one of the largest tequila selections. With more than 1,000 tequilas, mezcals, and agave spirits, the Meximodo collection will break the Guinness World Record for the most agave spirits in a single licensed location.
According to Robert Mackowski of the Pierson Commercial team, the lease agreement was finalized for Meximodo to open their Jersey City location in the summer of 2024. Saurabh Abrol, Le Malt’s COO and President, expresses his excitement for the new location. “We are thrilled to partner with Haus25 and introduce Jersey City to an innovative dining experience that brings them on a journey through Mexico,” said Saurabh Abrol. “Even more, deliver a locally sourced ingredient menu backdropped by a vibrant and warming atmosphere that showcases genuine Mexican culture.”
Meximodo aims to provide high-quality Mexican cuisine in an elating environment, encompassing that rich Mexican vibe. The restaurant will feature ample seating both indoor and outdoor with banquettes and communal tables. Patrons can sip their drinks underneath a towering painting of Catrina, a Day of the Dead icon who appears to wink and blow kisses thanks to video mapping technology. Guests looking for a more private experience can book Dalia’s Rose Room, a mezzanine space accessible through a hallway lined with thousands of suspended roses. “We want to transport our guests to Mexico through the flavors, spirits, music and visuals,” said Abrol. “It’s about an experience that engages all the senses.”
In the kitchen, Executive Chef Antonio Carballo will lead the culinary program, drawing inspiration from his upbringing in Puerto Vallarta. “Growing up in Mexico, I learned to make traditional dishes like masa, tortillas, beans and rice from my great-grandmother. I’m looking forward to honoring my heritage while putting a modern twist on the classics for Meximodo,” said Carballo. Guests can expect to find tacos with fillings like chipotle shrimp and seared ahi tuna, enchiladas topped with mole sauce, fajitas sizzling on cast iron skillets, and fresh ceviches. Chef Carballo’s family recipes for tamales, empanadas and churros will also make appearances.
It’s no secret that Jersey City has become a destination for exceptional dining and nightlife. With an early 2024 opening planned, it won’t be long before locals and visitors can enjoy Meximodo’s festive ambiance, extensive tequila selection, and authentic Mexican fare. Overall, with the vibrant design, traditional dishes reinvented, and a Mindo firmly rooted in Mexican culture, Meximodo aims to be a distinctive addition to Jersey City’s eclectic dining scene.
